What is smoke condensate?
It is smoke made from hardwood which is burnt inside a chamber. As the smoke rises, it is captured in a condenser and cooled down. The cooled smoke forms water droplets (condensation). These droplets are then collected and filtered twice.
How is smoke condensate produced?
Liquid smoke is made from the controlled burning of wood chips. The smoke from the wood chips passes through a condenser where the wood smoke cools and forms liquid and typically is diluted with water. The product is later filtered in order to remove ashes.
When was liquid smoke first produced?
Liquid smoke counts its production start since 1895. The USA were the first to start the production of liquid smoke. Now it is one of the main ingredients in burger meat or BBQ sauce.
What kind of wood is used for liquid smoke production?
There are various types of hardwood used for liquid smoke production. Usually it is a blend of different wood chips of hardwood which later becomes a nice and mild flavour smoke condensate.
Why is liquid smoke healthier compared to traditional smoke?
Liquid smoke is purified during the production process. During this process stage all the harmful carcinogens are removed from the solution of smoke condensate.
Is there taste difference between products which were smoked in a usual way and which were produced using liquid smoke?
There are no taste differences. You just enjoy the healthier smoked product.
